I made this salad for a summer baby shower. It was all women and we were having a cold soup and sandwiches, so I wanted something simple, light and healthy, yet delicious.
Spinach salads are so easy to make and have SO much flavor!
Salad Ingredients:
- 1 Package Baby Spinach
- 1 pint strawberries, sliced
- 4 ounces crumbled Goat Cheese (You could use Gorgonzola or Blue Cheese instead)
- 1/4 cup sliced almonds, toasted (I bought some in a bag in the Produce Section that were honey roasted-- YUM!)
- Poppy Seed Dressing (recipe below)
Modifications: You could add Avocado to this, or you could use a different nut if you don't want almonds. Pecans would be delicious in this as well.
Poppy Seed Dressing Ingredients:(Adapted from Gimme Some Oven)
- 1/4 cup Olive Oil (Or the Oil of your choice)
- 1 1/2 Tablespoons apple cider vinegar
- 1 Tbsp. honey
- 1/2 Tbsp. poppy seeds
- Pinch of ground dry mustard (optional)
- Salt and Pepper
